ala Tree Catalyst was created to explore the outer edges of what Kona coffee can be — thoughtfully, transparently, and without compromise.

Catalyst is the micro lot platform of Hala Tree Coffee, designed to release our most limited, experimental coffees to roasters seeking something genuinely distinctive. These are coffees that represent a specific moment in time: a single harvest, a precise processing decision, and a flavor profile that will never be recreated.

 
About Hala Tree Coffee


Hala Tree Coffee is a specialty Kona coffee producer rooted in quality, intention, and long-term stewardship of the land. Our farms in Kona are managed with a focus on careful cultivation, selective harvesting, and hands-on processing.

We approach coffee as both agriculture and craft. Every decision — from when a cherry is picked to how it is fermented and dried — is made with flavor, balance, and integrity in mind.

Catalyst represents the most experimental side of our work.

 
Why We Started Catalyst


Over the years, we found ourselves producing small, exceptional lots that didn’t fit into traditional sales channels. These coffees were too limited to scale, too specific to blend, and too unique to reproduce.

Historically, coffees of this caliber are quietly reserved for private relationships. Catalyst was created to offer a more intentional path — one that provides access while maintaining rarity, clarity, and respect for the work behind each lot.

 

Catalyst allows us to:

- Experiment without dilution
- Release coffees exactly as they were produced
- Share full transparency with the roasters who value it
 
Transparency at the Core

Every lot is presented with clear, detailed information, including cultivar, processing method, harvest timing, lot size, and sensory profile. There is no mystery around what you are buying or how it was produced.

Our green coffee is vacuum-sealed at origin and handled carefully to preserve freshness, aromatics, and structure from farm to roastery.

 
How Catalyst Works
Catalyst lots are released in small waves throughout the year, depending entirely on harvest conditions and processing outcomes.

Each release includes a fixed allocation and clear availability. Some lots are offered in small quantities, while select offerings are available as 100% global exclusives, granting one buyer access to the entire world supply of that specific coffee.

Once a Catalyst lot sells out, it is gone permanently.

 
Our Processing Philosophy
Catalyst is where we explore processing as a tool for expression, not replication. We experiment carefully, always starting with high-quality cherry and letting the coffee guide the process.

Processes explored through Catalyst may include:

Anaerobic fermentations
Extended natural and slow-dried naturals
Washed and honey variations
Cultivar-specific processing trials
Controlled fermentation experiments
Each process is evaluated internally and released only when it meets our quality standards.

 
Who Catalyst Is For
Catalyst is built for roasters who value origin transparency, intentional production, and true differentiation. These coffees are well suited for competition use, limited releases, and roasters looking to offer something unavailable anywhere else.

 
From Farm to Release
Every Catalyst lot is produced, processed, and released by Hala Tree Coffee. Nothing is outsourced, blended, or recreated. Catalyst exists to share what happens when curiosity, discipline, and Kona coffee intersect — one micro lot at a time.
